Over the past 2 days we have packaged 382lbs of sausage from 3 pigs. 😮😮😮

These pigs came from Melissa Sharpe from Rocky Ridge Heritage Hogs. The hogs were 8months old and their kill weights were: 419, 410, 409, 384 & 313. Her stock produces some amazing pigs.

Thank you for everyone’s patience with having to reschedule the small flock processing day. I finally got my vacuum sealer back this past Monday. We have rescheduled the small flock processing day to November 3rd.

Big announcement and some price changes!!!!!

HCMP is excited to announce that we will be starting to process beef very soon. Now this will be with very tight restrictions. We are extremely limited on the size we can take and the cuts. We do not have the capability to age the carcass so everything will be done on site same day. We apologize for such tight restrictions but it is a step in the right direction. We understand that this will limit us on the customers we can help, but we are proud to offer this to those we can help.

Here are the guidelines for beef processing:
- 1000lb or less live weight
- If over 1000lb's, then $1.5 per pound over, maximum of 1200lbs. If the kill weight is over 1200lbs then there will be a $200 per 50lb increment added fee. I'm sorry we just do not have the ability to handle large carcasses
- You MUST have the ability to efficiently move the cow from kill location to our trailer and to be able to hang the carcass for weighing
- $110 kill fee (covers kill and disposal)
- $1.50lb hanging weight
- Cut selections offered: Burger, Steaks, Stew, Brisket, Ribs and some roasts (we will not have fat to add to the burger so the fat content your cow is what you will get)

Thanks to some upgraded equipment and new techniques learned as well as matching industry standards we will be changing the way we price our grinding / sausage.
- All grinding will be charged at $0.40lb
- If the total griding goes over 200lbs then an additional $100 fee will be added

Here are the next 2 small flock processing dates. August 26th and September 30th. Things to remember:

- Must EMAIL us with your name, phone number and address and how many birds you plan to bring.
- Maximum number of birds is 15
- All birds will be processed whole
- You must bring in crates
- You must bring a cooler large enough with your name on it and ice inside
- You must drop your birds off and you will be called when they are ready, you cannot remain on the premises

I believe these 2 ladies were preparing to move to the Artic. With the fat layer they had they definitely were not getting cold. We packaged 307lbs of extra fat between these two.
