Søuld’s acoustic panels are made from eelgrass gently collected along the Danish coast after it washes ashore. By removing the eelgrass from the shore, biomass producing climate-damaging greenhouse gases such as CO₂ and methane is removed. At the same time, the carbon captured during growth is stored within the material.

A third-party verified EPD confirms that more carbon is bound in Søuld Acoustic Panels than emitted during production (A1–A3). Søuld has achieved Cradle to Cradle Certified® Gold across Material Health, Circularity and Full Scope (version 4.1).

Søuld’s Acoustic Panels deliver high acoustic performance through the porous structure of eelgrass, effectively reducing noise and creating calm, comfortable spaces.

Naturally occurring mineral salts provide inherent fire resistance and durability, while also regulating humidity and maintaining extremely low emissions.
Eelgrass is gently collected along Danish coastlines after it washes ashore. By preventing decomposition, the carbon captured during growth is stored within the panels. A third-party verified EPD confirms that more CO₂ is bound than emitted during production (A1–A3).

Eelgrass is a remarkable renewable resource that naturally regenerates each year in the sea. This abundant plant has a short life cycle where its leaves detach from the roots during windy weather and washes ashore without human intervention.

Once washed ashore, the eelgrass will eventually decompose, releasing methane back into the environment. This process contributes to greenhouse gas emissions and can lead to nutrient overloads in marine ecosystems, affecting water quality and marine life. By actively collecting eelgrass from the coastline, Søuld helps to mitigate these impacts and promote a healthier coastal environment.

At Gaijin, a restaurant deeply rooted in the love for Japanese cuisine, Søuld’s Acoustic Mats are installed across the ceiling to create a calm and balanced dining atmosphere. Made from eelgrass gently collected in Denmark, the acoustic panels soften sound and enhance comfort, while adding a tactile, organic element to the space.

The muted tones and natural texture of the material complement the restaurant’s understated aesthetic, reinforcing a sense of intimacy and ease.

By integrating Søuld’s acoustic panels as a visible part of the design, Gaijin brings nature into the interior — a quiet reminder of balance, craftsmanship, and sensory well-being.

COMPOSED MATTER curated by Norm Architects
Featuring Søuld, Sumum and Motarasu

At the centre of COMPOSED MATTER lies a shared dedication to materiality. Eelgrass, light and crafted surfaces are presented not simply as functional elements, but as carriers of atmosphere, texture and meaning.

COMPOSED MATTER brings together three distinct brands, each shaped by its own heritage, craft and aesthetic language. Curated and spatially designed by Norm Architects, the exhibition unfolds as a quiet exploration of how materials, light and space interact to shape our sensory experience.

With artworks and designs by: Sara Martinsen, Signe Hytte, Isabelle Yamamoto and Amanda Betz

With contributions from: Fischer, Dedar, Linolie & Pigment, Huus, Tintology and Jullight

Designed in 1975 and carefully refined in recent years, Restaurant Rosenhøj balances architectural restraint with a strong connection to its surroundings.

Inside, Søuld Acoustic Fragments were introduced to soften reverberation created by open spaces, wooden floors and large glass surfaces. The modular format allowed the solution to adapt naturally to the existing architecture — including walls and angles shaped by time.

The result is an interior where acoustics, materiality and atmosphere work together quietly in the background.

Built in 1975 by a local architect, Restaurant Rosenhøj is set on a hilltop at the edge of Krabbesholm Forest and reflects a clear 1970s vocabulary: straight lines, generous glass façades and a clean, restrained expression.

Installed on the interior walls, Acoustic Fragments form a cohesive surface that integrates naturally into the rhythm of the interior. Precise cuts and subtle shifts in orientation create depth and shadow, enhancing the tactile quality of eelgrass. The modular format also allows flexibility in an older building where walls and angles are not perfectly aligned.

Acoustic Fragments contribute both functionally and aesthetically — creating a calmer atmosphere where conversations unfold comfortably, even during larger events.
