Grassy Bar Oyster Company Grassy Bar is an oyster bed on Morro Bay estuary, cared for by the Trevelyan family of Cayucos.

I am a marine ecologist with 30 years experience working in sustainable, environmentally sound molluscan aquaculture. Grassy Bar was founded in 2009 when I "bought the farm" and got beached on the back bay with a bevy of bivalves. Much to my relief my son Charles came to help me, and to share my passion to coax our beds to flourish with the succulent shellfish.

It all starts with healthy seed. 🦪

We raise and care for our oysters beginning in our floating nurseries in Morro Bay when they're no bigger than your pinky nail! Our team regularly sorts them by size to give them the space they need to grow. As they get bigger, they move out to the farm to finish growing in the waters of Morro Bay.

A lot happens before an oyster makes it to your plate—and we love being part of every step.

Grassy Bar Oyster Company is dedicated to ensuring our farming practices harmonize with the health of Morro Bay.

That's why we collaborate with the Morro Bay National Estuary Program (MBNEP, ) and other colleagues to help monitor and preserve our precious ecosystem. Dr. Nathan Churches, the GBOC science lead, recently discussed shellfish farming in the bay at the MBNEP Science Explorations night at Cuesta College. You can find some of our collaborative work on Page 11 of the 2026 State of the Bay Report produced by the MBNEP.
