Come in on any Friday or Saturday night in our Wood Shop and there may be a wait to grab a seat. Our incredible Pizza, wraps, salads and coffee are the result of 2 people’s desire to create a destination spot and a place where community is cultivated. It’s already an awesome little town with close ties, amazing friendships and a wonderful history. Here’s a synopsis of how we got here, minus the blood and tears.
The original intent was to come to Belleville, live a quiet life and allow our children to be closer to their grandparents. What we found was a town in need of “something”. Not that we were equipped to help financially, but we thought maybe we could make a some kind of difference. Our first attempt was to launch our furniture business (that was quite successful in Texas) in this rural setting. We bought an old building in downtown Belleville that was in need of a lot of TLC. We signed up for several shows and began pumping out as many dining tables and beds that our 4 hands could make. We bit off a lot and started making deliveries for custom orders. Chicago, Omaha, Kansas City and Wichita were all spots we would visit, sometimes weekly, in order to make deliveries. At the same time, both Kelly and I held down full-time jobs AND raised 4 kiddos. We love the custom furniture industry and have seen it grow exponentially, which is phenomenal.
While sanding down tables in the freezing downtown building with ONE electrical outlet, we saw that this place had more potential than just a simple workshop for building furniture. The vision began with a coffee shop dream. A place where customers could sip on coffees and eat homemade pastries, all while building their dream table. After all, Kelly enjoyed cooking for our family and we are self-confessing coffee snobs. We threw up a gigantic wall to separate workshop from coffee shop and found an amazing slab of wood to be the center of the community space. As we removed carpet, then glue from the original hardwood floors and exposed each brick on the wall with a simple chisel, we came to see that coffee wasn’t enough. Pizza Hut had closed down and there was no sign of another shop coming to town. Why not get a wood-fired oven and offer food with our coffee, right? Neither of us had ever made a pizza before, but we thought it was worth the risk.
The oven was purchased and the dream became bigger each day. Evenings and weekends were spent building booths, tables, cabinets, walls, bathrooms and ceilings. We hired an electrician to map out lighting and we put in an actual HVAC system. The large garage door that was purchased to take dining tables in and out, would now be used as a way to bring the outside in on beautiful Kansas days. We weren’t prepared in the least bit, but we were motivated. The day the oven arrived, we didn’t know if it would even fit! The community rallied together and helped us take it inside. It was a bute!! Our bank account was tapped out, and we were anxious to get started, so we sought local support for financing and finished the project. Experimenting began with dough recipes, pizza flavor ideas, coffee concoctions, etc. Our hours started mornings only to get used to the coffee side of things and we worked our way into the pizza. We quickly found out that small towns are tricky. We took things slow and watched our customer base, listened to their feedback, and came to understand what the area wanted and needed. We landed on limited hours with no mornings and have been going full force ever since. Our staff is incredible!! They see the vision and they work hard to maintain it. Our customers are superb! They are loyal, encouraging, and just plain awesome. You may also see our young children serving pizzas, taking drinks and offering help as well. They do this without hesitation.
