"***** 12" Tapered and Non-Tapered Rolling Pins - While giving a shot at making a blueberry Danish braid for the first time, in the process of folding and rolling out the pastry I came to realize that I needed a straight French style rolling pin to be able to apply sufficient weight across the breadth of the pastry. I nonetheless needed a rolling pin that was short due to limited workspace. I also wanted one of high quality wood, preferably made in the USA. The Clines 12” rolling pin was the answer. Not knowing what species of wood to go with (Oak, Maple, Cherry, Walnut), I contacted Clines, told them what I would be using the rolling pin for, and Dan recommended I go with Maple. Unsure whether I should get the tapered or non-tapered model, I decided to get both and am glad I did. In making a Danish braid for a second time, I discovered that a benefit of a tapered rolling pin is that its tapered (angled) ends facilitate easy workout of small portions of pastry. For example, in that the pastry prior to building and baking needs to be rectangular in shape, the tapered ends of the tapered rolling pin made it easy to work out irregular shaped corners into squared off ones. The diameter of the Clines rolling pins is about perfect. And for my current needs, the weight of the maple is sufficient. Both rolling pins I received were well oiled (with mineral oil to preserve the wood) and adequately bubble-wrapped for shipment. Making homemade flour tortillas for unleavened bread and ultra thin pizza crust used to involve a fair amount of labor, but not anymore thanks to the Clines rolling pins."
