We count and weigh all liqour, beer (kegs as well) and wine each audit period. During this process we compare the current product on hand to the sales for the week and check the current drink recipes for employee accuracy. This detailed process tells you (the owner) how much shrinkage you have per week... we can tell you how short you are down to the ounce!
