Shrimp and lump crab in a creamy homemade cajun alfredo sauce over pasta
For the alfredo sauce I chop and saute red and green bell peppers, half of an onion, and 1 celery rib in a little butter, 1 TBSP of Cajun seasoning and 3 cloves of chopped garlic, and sauteed vegetables and 3 tablespoon of flour. Stir until the garlic softens, Next add 1 cup of pasta water, and 1 cup of heavy cream, 2 cups of fresh grated parmesan shredded cheese, black pepper, and garlic powder to your taste. Stir well, once cheese is combined and creamy turn down to low heat. now I cook my cajun seasoned shrimp in butter until pink. Add the shrimp to the sauce and stir, add your lump crab and fold gently into the sauce. Now add your pasta of Choice or serve over rice, grits or pasta. I hope this makes sense lol please enjoy

A great side anytime of year! For a Watergate salad
1 box of pistachio pudding
20 oz can undrained pineapple
2 cups of mini marshmallows
1/2 cup chopped pecans
1 container of thawed coolwhip
(8 oz)
Start by mixing together the dry pudding mix, crushed pineapple, mini marshmallows, and chopped pecans. Next, fold in the thawed Cool Whip until well combined. Chill until serving time.
This recipe can easily be doubled for a large family dinner. You can serve this as a dessert component but I place it on the table with the main dishes. It is always a hit.
You can serve this in a large bowl or if using it for dessert individual servings in clear glass mugs or clear cappuccino cups decorated with a maraschino cherry makes a nice presentation.
PS Fun Fact: This dessert is sometimes referred to as “Watergate Salad” because Jello came out with the pistachio pudding flavor that same year (1976

Cabbage Rolls
16-18 large cabbage leaves
1 1/2 pounds lean ground beef
3/4 cup white rice, uncooked
3/4 large onion, chopped
1 clove garlic, minced
1/2 teas salt and pepper or to taste
1/4 can Tomato soup
or 1/2 can Tomato sauce
Garlic powder, to taste
Onion powder, to taste
1 Tbs. Parsley, crushed
2 Tbsp Worcestershire
1 large egg, lightly beaten
Fill a large stockpot with water, bring to a boil. Take a paring knife, remove the core from the cabbage. Add the cabbage into the pot facing the core down. Turn the heat to medium-low. Boil for 8 to10 min. Slowly pull off leaves and place them to drain.
While cabbage is boiling mix the rest of the ingredients together.
Gently remove the cabbage leaf and put the meat mixture in the leaf and roll them up. Once rolled, put the seam side down
Stove Top Method:
In a big stock pot, place tomato sauce in the bottom of pot. Place cabbage rolls seam side down. Pour V-8 or tomato juice on top, cover. Cook on top of stove on med-low for 1 hr or until meat is done
Oven Method :
Preheat oven to 350° F.
Coat a 9"x13" pan with cooking spray. Place 1/2 of the tomato sauce in the bottom of the baking dish. Place the cabbage rolls, seam side down. Top with remaining sauce. Cover with foil.
Bake for 90 minutes or until cabbage is tender and meat is cooked.

Copycat Applebee's Hot Artichoke and Spinach Dip

Ingredients:
1 (10 ounce) box frozen chopped spinach, thawed
1 (14 ounce) can artichoke hearts, drained and roughly chopped
1 cup shredded parmesan-romano cheese mix
1/2 cup shredded mozzarella cheese
10 ounces prepared alfredo sauce
1 teaspoon minced garlic
4 ounces softened cream cheese
pepper (optional)
Directions:
1 Preheat oven to 350 degrees.
2 Combine ingredients thoroughly in a bowl and spread mixture into a small baking dish (I used an 8" X 8" dish).
3 Bake for 25-30 minutes or until cheeses are bubbling and melted.
4 Serve with chips or bread and enjoy.
