Crystallization of honey doesn't mean it's fake. Actually it's the other way around. If the honey does not crystallize especially when in the fridge, maybe it's a sign that it's not real.

Honey stored in cold areas crystallizes faster while warmer areas prevent crystallization.
π― WATER CONTENT
Honey with a low water content crystallizes more easily.
π―POLLEN AND DUST
Particles like pollen and dust grains can speed up crystallization
π― TYPE
Different types of honey crystallize at different rates. For example: Honey from sunflower and clover crystallizes easier than honey from maple and eucalyptus.
π― FRUCTOSE TO GLUCOSE RATIO
A high fructose to glucose ratio slows crystallization.
NOTE:
To prevent honey from crystallizing, you can store it at a room temperature in a dark cupboard away from direct sunlight.
