Did you know it’s Coeliac Awareness Month?
As it’s Sunday, we are getting ready for a traditional Sunday dinner here in the Richardson residence. 🍽️
Back in November, I was diagnosed with coeliac disease—something I never knew I had.
For years, I thought it was 'normal' to feel constantly exhausted. Waking up more tired than when I went to sleep just felt like part of being a busy, working mam!
It wasn't until I tried to donate blood and was turned away for critically low iron that I finally got tested. Six months later, we found the real culprit.
Coeliac disease is a chronic autoimmune disorder. When gluten (a protein in wheat, barley, and rye) is eaten, the body mistakenly attacks the small intestine. This damages the villi—the tiny, finger-like projections that absorb nutrients—leading to severe fatigue, low iron, and other complications.
Since my diagnosis, I’ve had to completely change how I cook and the choices I make, but I honestly feel like a different person now!
With a lot of practice, I have finally mastered the absolute essential item for any Sunday roast with using cornflour... Yorkshire puddings are officially back on my plate! 😋
