It’s always a full on day when we’re sharpening the steak knives here, 170 knives in around 7 hours!!! Well done Lola, you’ve worked really hard today and I’m not surprised you need a lie down after that!!!!

From start to finish (with minimal guidance) you’ve done an amazing job removing the heel and making the knife flat to the board once again, I’m super proud of how you’ve put everything you’ve learned into practice and the result is amazing!!

You’ve gotta keep pushing forward and stop cutting your middle finger!!! Then soon you’ll be as good as your old man!!!

It always makes me smile when a chef is holding a specific knife and starts the conversation with “any chance!!”, even before they’ve asked I usually say “hell yeah!!!”

So any chance you can serrate this knife for carving on a Sunday? Oh yeah……. I’m left handed!!!

One of these is the devil in disguise, claiming to be the best way to keep your knives sharp but instead it destroys them, the other is recommended by chefs to keep your knives sharp and looks a bit like Jesus!!!

I often get asked “how do you sharpen serrated knives?” My usual response is “I’ve got a leprechaun in the van that does it for me!!!!”

Let me introduce you to the leprechaun and reassure you that a full risk assessment and all health and safety laws were adhered to!!!!

What it takes is what it takes, it’s all the work that goes in behind the scenes that makes the difference!!!

So I just want to give a massive shout to all of the people working in the hospitality industry at this time of year, your hard work and dedication may not always be appreciated but it certainly doesn’t go unnoticed, but could you just just flat blades for carving though??!!

No matter how careful you are and how much you look after your knives accidents happen, one lapse in concentration and this knife was knocked off the board and chipped as it hit the floor!!!

The challenge is not only to remove the nick but to keep the shape of the blade without removing too much metal!!!

When you come back from a couple of days off and find out that your knife has been used to split kindling, shout, scream, have a little cry and then give us a call and we’ll come and save it for you!!!
