Bambunut Bambúnut is a new brand & movement supporting a healthier & more conscious way of living as we prov The Bambúnut Story.

We are two old friends, big foodies & travellers, who are tired of the trends of single-use plastics and mass production where things may come faster and cheaper, but we rarely know how they’re made, who made them, or the true cost of their manufacture to our fragile environment. We want to do our bit towards changing that...

While travelling off the beaten track in south-east Asia, we started t

o look towards nature for inspiration, and it wasn’t long before we discovered coconuts and bamboo, two of the most sustainable ‘super plants’ on the planet, widely used for coconut oil and furniture manufacturing, but whose by-products and off-cuts are often left unused and abandoned. What if we could rescue, repurpose, and handcraft these ‘leftovers’ to produce a range of of tableware products to create work for local craftsmen, bring joy to the purchaser, beauty to the home, and do a little bit to sustain the planet all at the same time? This year's trip to Vietnam’s Ben Tre Province gave us the spark of an idea.

So it would seem like I just pulled off a reasonably good effort of 's entirely plant-based Black Forest Gateau for Mrs.Bambúnut's birthday today :) The candles were lit at 7.25am this morning (this is how it goes when you have two excitable kiddies in the nest) and the cake is well and truly devoured and already a distant memory!⁠

One little tweak that I (admittedly) experimented with whilst baking this fairly epic number (two hours of my life gone...), was sticking with our beloved coconuts and using coconut oil, coconut cream and coconut sugar and I think it worked a treat!⁠

Didn't get a chance to photograph the final creation, but being a 'nuts for coconuts' family, there's always plenty of these little tropical nuggets kicking around...⁠

As we approach the end of a year seamingly headlined with Covid, Covid and more Covid, let's please not forget the climate emergency we are still very much in the thick of and is not going anywhere unless we start making some changes in the way we live.⁠

This ISN'T over dramatic and this IS very real. A Green New Deal cannot come quickly enough... Hopefully we haven't forgotten all the wild fires at the beginning of the year along with countless other natural disasters all of which have been provoked or accelerated by climate change. ⁠

I know it might feel like a few lifetimes ago (school closures, working from home and in-laws will warp your sense of time right!)⁠ but this was this year!⁠

So what the planet really really needs right now (amongst many other things of course) is a SUPER PLANT absorbing a whopping five times more carbon dioxide and producing 35% more oxygen than any other tree species. ⁠ Something magical that can grow up to four feet in one day and up to 30 times faster than most 'normal trees'. ⁠

HELLO BAMBOO - we thank you dearly for being the most sustainable material on earth. For not needing any nasty pesticides and or requiring much water. For being so versatile and such an inspiration. ⁠

Not normally one to 'name and shame' but on this one, I think its fair enough! The Top 5 Worst Plastic Polluters Of 2020 Are…🥁 , , , , & COMMENT BELOW with what you think they should do and change and what would you promise to do in the meantime 👇🏾⁠

These corporations polluted the most places with the most plastic waste while waste pickers around the world bear the burden of cleaning up after them - I mean how do we even begin to explain the crazyness of this to our children?!?⁠

And to you Mr & Mrs. corporate polluters, how about you REVEAL how much plastic you really produce, REDUCE your total plastic footprint, and REINVENT your packaging to be reusable or refillable. It's shameful how us tiny little brands along with so many remarkable developing countries around the world are making big steps towards zero waste and positive change while you 'big boys' seem to be doing very very little...⁠

💚 💜 PITAYA NICE CREAM with PISTACHIO 💜 💚 ⁠

Back on November 25th was the International Day for the Elimination of Violence against Women, an event desired by the United Nations General Assembly since 1999. The purpose of this celebration is to raise public awareness on a problem that is unfortunately still way too current and that shows no sign of resolving itself 100% any time soon.⁠

For the special occasion, and opted for a themed recipe with some curiosities about the ingredients used, a recipe with bright colours like the life of a WOMAN must be!⁠

And a gentle reminder that WOMEN do have balls, they're even bigger than men, just a wee bit higher :) ⁠

And somehow, in between all the pre-Crimbo build up and craziness, we managed to pull this one out the bag after lunch - Plant-based Tiramisù - Perhaps I should have included a pic of a very puzzled looking Calabrian ’nonna’, apparently not very used to making mascarpone out of soaked cashews!

Plant-based mascarpone recipe:
- Cup of soaked cashews
- 1/4 cup of water
- 3 (generous) spoonfuls of maple syrup
- 2 spoonfuls of cocoa butter
- 1 spoonful of vin santo (or any kind of sweet wine of brandy)
- 1/2 teaspoon of vanilla extract
- Big pinch of himalaya salt
- Glug of espresso

But was a blast making this one, especially using the old-skool blender from the 70’s (back before Amazon, Black Friday, Capitalism gone Crazy and when home appliances didn’t need to be replaced yearly right!) And rest assured this little number was S-P-E-C-I-A-L and inevitably didn’t last very long!

Funny to think that it wasn’t THAT long ago, when it was ‘the norm’ to have old friends stay over when visiting from out of town… A time when we used to LOVE cooking for guests and then sharing travel tales, new plant-based recipes and countless glasses of Amarone around the dinner table…

So we really enjoyed a nice pang of nostalgia upon seeing this little gem come out the woodwork, as our friends took organic produce to a whole notha’ level :) Still don’t think they can believe how easy this little treat is!
