Pizzelle
Ingredients:
2 cups all-purpose flour
3 large eggs
3/4 cup granulated sugar
1/2 cup unsalted butter, melted
1 tablespoon vanilla extract
1 tablespoon anise extract (or 1 teaspoon anise seeds)
1 teaspoon baking powder
A pinch of salt
Directions:
In a large mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
In another bowl, beat the eggs and sugar until light and fluffy.
Stir in the melted butter, vanilla extract, and anise extract (or seeds).
Gradually mix in the dry ingredients until a smooth batter forms.
Preheat your pizzelle iron according to the manufacturer's instructions.
Spoon a tablespoon of batter onto the center of each pizzelle mold and close the iron.
Cook for about 30 seconds to 1 minute, or until the pizzelle are lightly golden brown.
Carefully remove the pizzelle and let them cool on a wire rack.
Repeat with the remaining batter.
