As we look to 2025, we look forward to being an integral part of your upcoming harvest season.

DECANTER LEES RECOVERY UNIT:
As some of you already know, Michael Paetzold Wine Services acquired a Decanter unit. The unit became
part of our fleet towards the end of the 2024 harvest.

We can now offer our clients two ways of tank bottom recovery:
For the very thick product, the decanter will clean the lees from 50-60% solids to about 20% solids.
Hereafter the client can choose to filter the product with their own lees filter or to combine it with our
second unit, a Leestar which will clean the decanted lees to below 2 ntu.

2025 Harvest - Tasting Time, Nature, and Craft

How Michael Paetzold can be of service for the 2025 season:

-JUICE LEES FILTRATION: volume recovery. Juice, from the settling lees, is enriched with strong varietal
flavours. The addition of this recovered juice will increase your wine’s flavour profile.

-JUICE FILTRATION: for the time when your tank just does not want to settle. Treating this juice, before fermentation starts, will avoid unwanted fermentation flavours and lower the pressure of wild yeast and bacteria.

- JUICE CONCENTRATION: to increase low sugar levels and minimize fruit profile dilution. Harvesting for
optimal fruit profile could mean that the balling is not at the desired level. Juice concentration can help with maintaining mouthfeel and body.

- THERMOFLASH (FLASH PASTEURIZATION): to eliminate micro-organism spoilage before, during or after fermentation.
Great advantages when making sweet wine, treating the juice before settling helps with lowering the micro-organism pressure. This ensures your yeast can start the fermentation clean and healthy. Instantly stops the sweet wine fermentation allowing lower sulphur levels at the desired sugar level. Very helpful tool when VA is beginning to climb. The wine can be treated as is (no filtration needed) to stop active growing of volatile acidity bacteria. Wine should then be able to safely mature on its
original fermentation lees.

- CROSSFLOW FILTRATION , to clean your juice or wine.

- WINE LEES FILTRATION (Tank bottoms), volume recovery. There is still a high percentage of wine present in fermentation lees. With our latest addition, our Decanter combined with our Leestar or
your own lees filter, as much as 40% wine can be recovered from fermentation lees.

During the busy harvesting season, we will still be offering all our other services:
Cold Stabilisation, Crossflow Filtration, Bulk Filtration, Alcohol Reduction, VA removal treatment
and Riddling & Disgorging services (In house or at the winery).

This year harvest sneaked up on us and seems to have taken everyone completely by surprise.

Even though it was a hectic start to the season our dedicated technicians jumped into provide exceptional service to our loyal clients.

It looks like we’re about three quarters through the harvest. Thus our machines
and technicians are still out and about to assist where needed.

Flavy Lees Star, adding value to your settling lees (tank bottoms and sprit)!

After running our Lees Star unit on large volumes for the past 2 months, with very nice recovery rates, we did our first estate wine this week on a small batch of 3000L white bentonite lees with a 50% recovery of premium quality wine.

This opens doors for small producers who want to recover wine from their lees or fining lees, even more so adding value by recovering premium white wine bentonite lees and barrel aged red wine lees.

Harvest 2022 is underway for us at MPWS with 2 batches of settled lees filtered and 2 batches of Grape Juice Concentration on young vine Sauvignon blanc from 18 Brix up to 21 Brix done as well.

We are pleased to announce that our new disgorging line is up and running.
This new addition is no ordinary disgorging unit. This unit has been specifically designed for service providers for its compacity and is unique as the disgorging and dosing is done in one process.

The addition of this unit will compliment our existing line and retire our 1st and long-time running smaller unit. The new unit has been designed with the advantages of the retired unit in mind, maintaining its compacity and ability to work inside the cellar. It will be offloaded at the cellar and setup inside or where it suits our clients.

Newsletter: March 2021

A bit late and a bit wet!

After what has been a very deurmekaar harvest personified by a late start and very slow ripening which led to a lot of stop-start during the season, we blink our eyes and we are well into March already and heading to the last stretch of harvest 2021.

Most winemakers and viticulturists have now been thrown another curveball with some areas receiving 40mm of rain over the last few days, with the last of the late season white grapes still not at perfect ripeness and a large number of Red grapes still hanging, a challenging year becomes a bit more challenging!

With the major issues of rot and low sugar contents hanging over your head, the options of what we offer can maybe help guide you through this difficult time, with your main priorities of getting your phenologically ripe grapes into the cellar before rot sets in we offer the main option of Grape Juice Concentration by Reverse Osmosis and then if rot has unfortunately set in and you would like to ensure the microbiological safety of your wines to prevent VA or other spoilages, then we offer the Thermoflash® flash pasteurisation.

- Grape juice concentration to remove any fruit profile dilution or increase the low sugar level: when the fruit profile of the fruit is at its peak but the balling not at the desired level to bring that mouth fill after fermentation. This is carried out on reds by having you pull off as much juice from the skins, cold settle or flotate, then rack off the clean juice for us to work on. It is slightly more work in the cellar but the benefits of having great concentration on your wines will be well worth it.

- Thermoflash® to eliminate any micro-organism spoilage before, during or after fermentation: keep your wines sterile and healthy for ageing but without having to go through a tight filtration which will ultimately filter out all your yeast cells and vital mannoproteins that help give richness and complexity to your wines over time. This unit has also shown its great advantages when it comes to instantly stopping sweet wine fermentations and thus allowing you to keep sulphur levels lower and having your exact desired sugar levels

As always during these busy times we will still be offering our Cold Stabilisation, Filtration, De-Alcoholising, VA removal and Disgorging services to our clients whenever they need it.

We are very pleased and excited to announce that our new disgorging line has arrived. In our continued strategic pursuit of excellence and improvement, we have purchased a new disgorging line from TDD Grilliat in France (champagne) to replace our 1st and longtime running unit. This new addition is no ordinary disgorging unit. The TDD-Grilliat company is a family business solely dedicated in designing and manufacturing equipment for the sparkling wine industry. In their equipment portfolio, this unit has been specifically designed for service providers around the world and is unique as the disgorging and dosing is done in one process.

The addition of this unit will compliment our existing line. As a fixed unit in our enclosed trailer, our existing unit is exclusively used outside the cellar. The new unit has been designed with the advantages of the retired unit in mind, maintaining its compacity and ability to work inside the cellar. It will be offloaded at the cellar and setup inside or where it suits our clients.

The unit will be ready soon. Right now, we are hard at work to get this unit ready for excellence.
