🐫 Back to meal prepping for my sophomore & 2nd grader!
Tomorrow starts our first day back to actual school (Calallen) 🙌🏻 Not gonna lie....I do love having my kids home but it’s been quite the s**t show around here!😂
Vegan burritos.
quinoa, refried pinto beans, black beans, sautéed onions & corn. Cook quinoa in vegetable broth and spices of your choice. Sauté your onions in a separate pan while quinoa is cooking. Then add your refried beans, black beans, onions and corn into the same pot you cooked quinoa. Mix all of it together. Then place desired amount on to a burrito tortilla and pop that sucker in a panini press for a few mins! Bon appétit 😉
