Testing out this beast. The “Cuchillo De La Muerte” from courtesy of . It’s getting a touch up on the kangaroo strop loaded with Gunny juice. Been using this knife for everything at work in some very heavy prep sessions and it never seems to get blunt

FOR SALE. Sakai Kikumori Blue 1 Migaki 165mm Santoku. Really beautiful little carbon core santoku with a green wooden handle and copper spacer. Can also provide a wooden Saya at extra cost. Used a handful of times with some minor signs of wear. The core is starting to patina. This is a bargain. DM me for details 🔪

Got some new lovely bricks and stuff in to bless your knives all the way from 🇺🇸. The 200 really is really impressive so far and is a great quality product. The Ohira medium natural stone seems to leave a really polished edge but still with bite. And last but not least some Gunny juice diamond emulation to strop with

Mac mighty meeting my newest stone the Imanishi Manmade Aoto.
I’ve got a soft spot for . There are a lot more fancy looking Japanese knives around but Mac isn’t a show pony it’s a work horse. Sturdy and performance for years 🔪

A lovely set from with some knives from & . Lots of work from simple sharpening to chip repair, thinning and re profiling. The Blenheim Forge knives with wrought iron Damascus cladding and Japanese blue steel core are really nice

Back to the sharpening with a bang. Getting to meet a legendary knife today. The highly imitated Masamoto KS white #2 240mm gyuto. Not really a blunt knife, came in with a well maintained toothy factory edge but the owner wanted the edge polished up for sh£ts and giggles 🔪
